做法:春笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧热,倒入2勺油,放入(rù )生(shēng )姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到(dào )水快熬干的时(shí )候加入(rù )盐,翻炒均匀(yún )稍收汁(zhī )时盖上(shàng )锅(guō )盖焖。
