做(zuò )法:春笋切成(chéng )片(piàn )后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生(shēng )姜、春(chūn )笋、牛(niú )肉(ròu )片、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮(zhǔ )到(dào )水快(kuài )熬干的时候加入(rù )盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
