做法:春笋(sǔn )切成(chéng )片后加少许盐捞出后用(yòng )清(qīng )水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左右(yòu )。再加入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。
