做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入生姜(jiāng )、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量清水半掩住(zhù )春笋,盖(gài )上锅盖大(dà )火煮开后转中火(huǒ )。煮到水(shuǐ )快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖(mèn )。
