做法:春笋切(qiē )成片后加少许盐捞出后用清水浸(jìn )泡(pào ),生姜切片,葱(cōng )切成(chéng )段(duàn )。锅烧(shāo )热,倒入2勺(sháo )油(yóu ),放入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
