做法:春笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀(yún ),加入少量清(qīng )水半(bàn )掩住春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮(zhǔ )到水(shuǐ )快(kuài )熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
