做法:春(chūn )笋切成片后加少许盐(yán )捞出(chū )后用(yòng )清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加入少量清水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的(de )时候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
