做法:春笋切成片后加少许(xǔ )盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分(fèn )钟(zhōng )左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快(kuài )熬干的时候加入盐,翻炒(chǎo )均(jun1 )匀稍收(shōu )汁时(shí )盖上锅盖焖。
