做法:春(chūn )笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜、春(chūn )笋、牛(niú )肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后(hòu )转中火。煮(zhǔ )到水快熬干的时候(hòu )加(jiā )入盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅盖(gài )焖。
