做法:春笋(sǔn )切成片后加少许盐捞出后(hòu )用清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上锅(guō )盖(gài )大火煮开(kāi )后转中火。煮(zhǔ )到水(shuǐ )快熬干的(de )时候加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
