做法(fǎ ):春笋切(qiē )成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加(jiā )入(rù )少量(liàng )清水半掩(yǎn )住春笋,盖上(shàng )锅(guō )盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
