做法(fǎ ):春笋切成片后(hòu )加(jiā )少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖(gài )上锅盖(gài )大火煮(zhǔ )开后(hòu )转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
