做法:春笋(sǔn )切(qiē )成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段(duàn )翻(fān )炒1分钟左右。再加(jiā )入(rù )生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
