做(zuò )法:春笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加(jiā )入少(shǎo )量清(qīng )水半掩住春笋,盖上锅盖大(dà )火(huǒ )煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均(jun1 )匀稍(shāo )收(shōu )汁时盖上(shàng )锅盖焖。
