做(zuò )法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清(qīng )水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入(rù )少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大(dà )火煮开后(hòu )转中火(huǒ )。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
